Amanda’s Spicy Chicken & Beans

Last night was one of those nights where you just have to rely on what you have in the fridge and cupboards to whip up a meal. I had some chicken thighs thawed and this is what I came up with! Filling, quick, healthy and tasty. Everthing you want in a meal. 😉

It was quite spicy for my tastes but I’m a bit of a wuss so add as much or as little chilli as you like.

Ingredients (4 serves)

4 boneless, skinless chicken thighs (diced)
1/2 a red onion (diced)
2 x cloves of garlic (minced)
1 x tin of four bean mix (rinsed and drained)
1 x tin of diced tomatoes
2 x tablespoons of salt reduced tomato paste
24 black pitted olives
1/2 cup of flat leaf parsley (fresh, roughly chopped)
2 x teaspoons of dried Italian herbs
1/2 teaspoon of chilli powder
1/2 cup of water

In a saucepan sauté the garlic and onion over a medium heat in a little olive oil until translucent. Add chicken and cook until browned.

Add tinned tomatoes, four bean mix, tomato paste, Italian herbs, chilli and water (I usually use the can that the tomatoes were in to get last of the juices) and bring to the boil. Immediately reduce to a simmer for 10 mins.

Toss through parsley and olives and serve with basmatic rice or pasta.

Nutritional info per serve (without pasta or rice): 290 calories

With 1 cup of cooked pasta:  490

With 1 cup of cooked basmati rice: 446
