Something New with Pork Schnitzel

I had some lean, heart smart pork scnitzels at home and wasn’t really in the mood for crumbing them (or in the mood for the additional fat that comes along with it!) so I decided I’d roll them with some cheese, spinach and olives and add my new favourite sauce, horseradish sauce!  I took a photo thinking, “I’m not sure whether this will be all that tasty” but it turned out that it was!  So without out further adieu…

Pork with Cheese, Spinach and Olives

150g of heart smart pork schnitzels (you can buy them from Woolworths)

4 olives, sliced

A few baby spinach leaves

1 tables spoon of light tasty cheese, grated

Garlic salt

Horseradish Sauce

This makes enough for about 6 serves so store some in the fridge for another night.

1/3 cup of horseradish (jar or fresh)

1/2 cup of fresh parsley, chopped

1 tablespoon of olive oil

1 tablespoon of white wine vinegar

Preheat oven to 180 degress.  Lie the pork schitzel flat and top with cheese, spinach and olives.  Roll up and secure with toothpicks.  Sprinkle the pork with a little garlic salt.

Brown the pork in a pan on medium heat until all sides are even in colour.  Place the pork roll in the oven for about 10 – 15 minutes or until cooked through.  Slice evenly once done.

To make the sauce simply combine all the ingredients.  Serve with steamed vegetables and drizzle the sauce on top of the pork.

Variations

  • Replace the tasty cheese with feta cheese
  • Instead of horseradish sauce, try topping with a sauce made from tinned tomatoes, cooked onion and chopped parsley
  • Try rolling the pork with cous cous, tomato, ricotta and spinach

Get creative!   You don’t have to have the same boring meals every night to lose weight!  Keep lots of fresh and interesting food on hand to come up with your own culinary creations.  I’m sure you’ll be surprised and inspired!
